Panko Crumbed Chicken with Cherry Salsa

1 1/2 cups of panko crumbs

1 free range egg

2 chicken breasts

1 tablespoon olive oil

1 can of pitted cherries (drained)

2 roma tomatoes diced

1 red onion chopped

2 tablespoons of basil.

Method:

1 crack an egg in a bowl and whisk until blended then coat the chicken with the egg mixture than put the panko crumbs in another bowl.

2 Then place the chicken in the bowl of panko crumbs, and get the chicken well covered in crumbs.

3 Heat one tablespoon of olive oil in a frying pan and cook the panko crumbed chicken. Then transfer onto plates once cooked.

4 Open the can of pitted cherries and drain the syrup before transferring the cherries in a bowl then add the diced roma tomatoes and chopped red onion.

5 Mix the salsa until well combined then add the tear the basil into pieces and stir through and spoon it over the panko crumbed chicken..

New Potatoes and Cauliflower Mash

The new potatoes have a lower glycemic index and are smaller than the bigger varieties

Ingredients:

1 bag of new potatoes (baby potatoes)

1/2 bag of cauliflower florets

1 finely chopped onion

2 tablespoons minced garlic

1 teaspoon mixed herbs

3/4 cup diced bacon

1 small tub sour cream

1/4 cup colby grated cheese

Method

1 Steam the new potatoes in its bag unopened in the microwave for 7-8 minutes.

2 Put half a packet of cauliflower florets in a microwaveable dish and then put this dish in the microwave for another 7-8 minutes.

3. Cook the finely onion in a frying pan, then add the minced garlic, and diced bacon. Then after that the mixed herbs.

4 When the bacon mixture is cooked get a bowl and add the steamed new potatoes to the cauliflower, and mash.

5 Next add the sour cream and bacon mixture and mix well.

Stewed Apple Tarts

Ingredients:

Core and quarter 6 green granny smith apples

The juice of 1 lemon

3 cups of water

1/3 cup organic honey

2 tsp. cinnamon

2 tsp. cloves

6 sheets of filo pastry

olive oil

Method:

1 After the apples are cored and quartered put the quartered apple in a saucepan and pour the lemon juice over them, then add the water, which is three cups.

2 Then add the honey, cinnamon, and cloves and bring the water in the saucepan to a boil and let the concoction stew.

3 The filo pastry needs to be thawed and at room temperature then take a sheet of filo pastry and put it down on the table its short side facing you.

4 Next, squirt the olive oil over the sheet of pastry, then spread the oil around with a pastry brush and pick up a second sheet of filo pastry and put on top of the first. Then repeat with the olive oil, then next divide the pastry into twelve squares.

5 Then create two star-shaped tarts out of six of the squares and repeat this process another two times as this will fill a muffin tray.

6 Brush muffin tray with olive oil before putting the star-shaped filo pastry on the muffin tray then put spoonsful of the stewed apple in the star-shaped filo pastry.

7 Next, put the used muffin tray in a 180-degree Celsius oven and cook for 15 minutes or until pastry is golden then once these tarts are cooked let them cool down a bit.

8 Then serve in a bowl with a dollop of Greek yogurt.
